A Simpler Time

Every Friday, Saturday and Monday from noon to eight, Joe and Jason would be selling pizzas out of a little cart on the side of the road on Main Street in Cedar City.  Someone made this little video recently of The Pizza Cart that is still going strong.  Jason's wife, Cindy, makes the sauce and dough from scratch and they are seriously the best pizzas you will ever taste.  They were our best friends, and we miss them almost as much as their pizzas.

Somehow, Joe supported us financially this way while we were both going to school and had a newborn to care for during our last semester at SUU.  (Jason probably paid us way more than he should have, but because of it Joe was able to be home during the weekdays while I did my student teaching).    Watching this movie makes me miss it so much.  We were both so crazy busy and couldn't imagine a day when we would be able to actually spend time together at night and on the weekends doing things we wanted to do together.  Now here we are, one year later, with weekends to ourselves and no homework to speak of ever.  But somehow I often find myself thinking about how much I miss these much busier, but much simpler, days in Cedar City.

Aaah! I love this! They are such inspiring people all around. Thanks for posting this :) Makes me crave the pizza though... it is so dang good!

I miss it too. Really, I miss the time before The Pizza Cart when we actually had time to hang out.
